First Ceramic Grater with Sharp, Unglazed Blades

April 7, 2008
(This document was translated from the Japanese press release.)

Kyocera Corporation (President Makoto Kawamura) is pleased to announce that, starting from mid-April, 2008, it will gradually introduce two new additions to its ceramic kitchen utensils lineup, namely the Authentic Ceramic Condiments Grater and the Authentic Ceramic Grater, at department stores and mass merchandisers throughout Japan.
Reinforced porcelain is used to make the two authentic graters, providing the benefit of sharper edges while maintaining strength. The size, direction and arrangement of the blades are designed to match the food ingredients for which these graters are intended.
Because they are made from ceramic, the graters are odor-free and easy to clean. The blades have been devised to bring out the best of the taste and flavor of the food ingredients, adding authenticity to these graters.

Background
Today, graters are made from a variety of materials, such as ceramic and metal, including copper and stainless steel. Since 1997, Kyocera has sold graters that take advantage of the characteristics of ceramic. They have been well-received by consumers as they are rust-free, odor-free and easy to clean.
Meanwhile, traditional sharkskin graters with fine grains on the surface are believed to be the most appropriate for grating wasabi. Authentic graters specifically designed for different food ingredients are popular and are used by many people in Japan.
With the two new types of ceramic graters, Kyocera aimed at creating authentic graters that can bring out the best of the flavor of food ingredients as sharkskin graters do, by inventing ceramic blades with sharp edges that do not require glazing.

Features
1. Sharp Edges
Generally, ceramic blades are glazed to prevent the permeation of moisture and dirt, which puts a limit on their sharpness. Kyocera has successfully developed, for the first time 1, unglazed sharp ceramic porcelain blades by using reinforced porcelain. This equips the blades with sharp edges that are smaller in size, ensuring consistent grating.

2. Specially Arranged Blades
Each type of grater has its own optimum blade size and arrangement.

Authentic Ceramic Condiments Grater
Small sharp blades are randomly deployed to recreate the fine grains that are unique to sharkskin graters. Two sizes of blades: 0.4 - 0.5 mm and 0.7 - 0.8 mm in height are used to grate food more finely.
The grater highlights the spiciness and flavor of wasabi. It perfectly cuts the fibers of stringy food ingredients such as ginger, and retains more spiciness.

This grater has larger sharp blades and is designed to quickly grate denser food ingredients such as daikon radish and Japanese yam. To strongly claw the food ingredients irrespective of the direction of grating, the blades are placed randomly instead of being arranged in straight lines. The grater slices the fibers without crunching them, enabling effortless and efficient grating.

3. Ceramic Porcelain is Rust-Free and Easy to Clean
These ceramic graters do not rust and are odor-free, making it possible to enjoy the natural taste of the food ingredients. It is also easy to wash the fibers off the surface. Disinfectants and bleach can be used to conveniently keep them clean at all times.

4. Anti-Slip Treatment for Powerful Grating Motions
The two graters come with an anti-slip treatment on the back of the other end of the grater handle. This treatment secures the grater on the table and other types of surfaces when grating, allowing consistent and strong grating motions.
